Flourless Cocolate Mint Cake step by step
- Preheat oven to 350. Spray a 9 inch cake pan with non stick spray. Line the bottom of the pan with parchment paper. Place pan on foil lined baking sheet. Set aside.
- In a small bowl melt mint chips in microwave carefully. It takes only a few seconds about 40 seconds on high in my microwave, stir until smooth.
- In a large bowl beat egg yolks, sugar.,salt, sour cream, vanilla.and peppermint extracts until light and foamy snouts minutes.
- In another large bowl with clean dry beaters beat egg whites until they hold stiff peaks.
- Stir melted chocolate mint into egg yolk mixture and blend in..
- Fold chocolate mixture into egg whites in 3 additions being careful.not to deflate.
- Pour into prepared pan. Bake 30 to 35 minutes until.it's puffed and a toothpick comes out clean. Don't overbake but be sure center is cooked.. After about 10 minutes run a sharp thin knife arouse edges to release any stuck parts. Then cool completely on wire rack.before carefully removing from pan.
